How to fix this cupboard knob back?

I would use a dowel or 4 maybe 5 matchsticks glued into that hole. Once dry, drill a pilot hole and then refit using the existing screw.

Can I salvage my disaster of an under-sink cabinet for actual storage?

Can I use a regular ball-bearing drawer slidse on their side?

You want “center mount” or “undermount” drawer slides. Ordinary ones probably won’t work. For example: center mount slide. (Not, strictly speaking, an endorsement of this item, though I don’t think I’...
