Plus adding a 2nd water heater makes no sense. You add a second hot water heater if you run out of hot water or if a house is large and run is too long to bathroom. If you have a drop in water pressure it means the city's water pressure is not strong enough or the pipes are undersized/corroded/clogged.

That K&T is going into a box at some point and the wires will not be separated anymore. I wont touch K@b the few times I just tried just to replace an outlet or switch the insulation started to come off.

The heaters need to be hard wired to be controlled by wall thermostat. Maybe they have that option but I doubt it. So you either need new heaters or go with Cominterns option.

Mixing valves are actually common on systems with a combination of radiant heat, baseboard or radiators. They all run optimally at different temperatures. It diverts some water that would normally go into boiler back in the the loop for floor heat or radiators lowering the temperature. Baseboard are normally at 160-180 degrees which is way too hot for radiators or in floor heat.

Blown in insulation should not be touch stove pipe either. Roxul insulation batts can touch it so if you want to wrap it with that first then let blown in insulation touch that.

Im not sure what gaps you are talking about but you need to get that blown in insulation out where the fireplace is. Use a shop vac and suck it up. Build something to stop insulation from falling in with a lid and you can put batt insulation on top. It is probably a zero clearance fireplace but I would not feel comfortable with insulation and who knows what else falling into there.

Are you using toilet paper or a wash cloth on your bum. I have the cheapest toilet I could buy and never have an issue. Maybe american food gives you constipation.
