I'm not sure i understand. There is probably 1 wire leaving the fixture and 1 wire leaving it. These would be black and white, but on old old wiring the insulation may have discolored.

Also, if you're asking if there exists a plug/receptacle that could be either 120 or 240, depending on the whim of the installer, the answer is no, any particular plug is either standardized at 120 or 240.

@cowguy All things being equal (which of course, they never are), I'd use the one large one instead of 2 smaller ones. But that's my opinion, and it holds as much weight as you want it to.
