Thanks for the answer. I have edited my question a bit to clarify that I'm sistering just as a convenient way to add elevation, and I'm not looking for the composite system to make up for the inadequacy (by today's standards) of the old joists.

@benrudgers, There are signs of water damage at the front right end of where the surround overlaps the tub, and in the walls behind and to the right of the tub. The floor has rotted in that area, so I'll have to remove the tub and the bottom parts of two walls to replace part of the floor.

Thanks.The house is from the 1880s. It's nothing special here in Massachusetts. And there is nothing awesome about a fieldstone foundation: it's messy and leaky.
